Orange Chicken Pasta Salad for Memorial Day

Pasta salads are perfect for a Memorial Day picnic and this one is particularly delicious as the mandarin oranges give it a fresh zesty flavor.



  • 10 ounce can of chicken breast
  • 8 ounce can of mandarin oranges
  • 2 to 2 ½ cups uncooked bow tie pasta
  • Handful of sliced almonds, to taste
  • 1/3 cup mayonnaise
  • Celery seed, to taste
  • Salt, to taste
  • Pepper, to taste
  • Prepare the pasta and then rinse and let it sit aside to cool.

Mix the chicken breast with the mayonnaise until thoroughly mixed. Add the mandarin oranges and the almonds. Don’t stir too much so the orange slices retain their shape somewhat and the almonds don’t all break apart.

Then add the pasta to the mixture. At this point you may decide to add a little mayonnaise if the mixture seems too dry. Then add celery seed, salt and pepper to taste. It’s the celery seed that makes this pasta salad taste exceptional. And the orange and chicken are the perfect balance for each other to create a light and fresh Memorial Day pasta salad.

This pasta salad can last a few days if it’s refrigerated and some say it’s even better after resting overnight.
