Memorial Day is the first official grilling-out day of the year, and nothing is as delicious on the grill as a good hamburger. That is until now; sliders, or tiny burgers, are the latest rage in appetizers and this spicy recipe is sure to please your Memorial Day guests and impress them with your grilling abilities.
- 2 egg yolks (freshest the best)
- 1 1/2 cup of olive oil
- 1 tablespoon lemon juice
- 1 teaspoon Tabasco sauce
- 1 teaspoon chili powder
- 1 ½ pounds ground chuck 80/20
- Salt, to taste
- Pepper, to taste
- Cheese slices, optional
- Mini burger buns
Premake the spicy mayonnaise. Separate the egg, beat the yolk and while beating slowly add the olive oil. And by slowly we mean add it only one or two drops at a time and stick to this very slow process until you’ve used all of the oil, if you go too quickly it will not mix properly.
Then add the lemon juice to the mixture and stir well. Finally, combine the Tabasco sauce and the chili powder until mixed thoroughly. Refrigerate the mayo until ready to use. It only lasts a couple days.
Preheat grill to medium/high. Season the meat with salt and pepper to taste and create little tightly packed burgers to fit on the mini buns. Grill on one side until they’re a little crusty, flip and cook the other side until they’re cooked the way you want them. Right before pulling, top with cheese (if desired) and close grill lid so it can melt a little. Place on mini buns and top with a healthy dollop of spicy mayo.
