Grilled Sweet Potato Fries

If you’re grilling this Memorial Day, consider adding sweet potato fries to the grill. Sweet potatoes are rich in both Vitamin C and Vitamin A and high in fiber. This version is healthier than deep fried white potatoes and is sure to please the crowd at your Memorial Day get-together.
Ingredients:
- 4 sweet potatoes peeled and cut into “fries”
- 1/4 cup fresh cilantro, finely chopped
- 1/2 cup brown sugar, packed
- 1/2 cup olive oil
- Kosher or sea salt
- Pepper
Directions: Prepare the grill so that it is medium-hot. In a bowl, combine cilantro, brown sugar, olive oil, sea salt, and pepper, making sure that the sugar is completely dissolved. Add sweet potatoes and toss them to coat them in the mixture. Grill potatoes on all sides until done, about 15 minutes total
Serve immediately.
